The ACN Eat and Chill Whatsapp group was created on 2nd May, 2020, with the aim of bringing together people with interests in cooking, trying and sharing recipes.
It was headed by Chioma Muotoh and Pelumi Ipede.
We had a weekly schedule of introducing guest cooks every Monday and having the group admins share their own recipes every Wednesday.
Recipes shared include potato and minced meat, potato croquets, bread,fruit parfait, amongst others. It indeed was a potato month.
Below is a recipe from one of our guest cooks, Timothy.
BAKED MASH POTATOES IN BUTTER WITH SHREDDED BEEF SAUCE
Total cooking time- 30mins.
Baked potato recipe ingredients:
- 8 medium sized potatoes
- 1tbsp butter
- 1tsp salt
Shredded Beef sauce recipe ingredients:
- 2 cups Beef broth
- 100g of shredded beef
- 1 red bell pepper thinly sliced
- 1 green bell pepper thinly sliced
- 1 yellow bell pepper thinly sliced
- 1 clove of garlic (chopped)
- 1/4 of a medium sized ginger(chopped)
- Half of a medium sized onion (chopped)
- Salt and seasoning cubes(knorr preferably) to taste
- 1/2 teaspoon of dry pepper.
⚫ Boil the potatoes until they are properly cooked and softened(salt added at this point).
⚫ When cooked, sieve out the water and put the potatoes in a ceramic bowl, add butter and mash evenly.
⚫ When properly mashed, put in a preheated oven and bake for 10 minutes until the top is slightly golden brown. At this point the baked potato mash is ready.
⚫ Boil the beef with two cups of water for 2minutes, add salt and seasoning to tasted .
⚫ When boiled drain the beef.
⚫ Heat up a non stick pot, add 4tbsps of veg oil or olive oil, pour in the veggies, onions etc and stir fry for about 30seconds and then add the pre boiled beef and stir fry all for about a minute, add the beef broth, and let boil together for 3 minutes.
⚫ Afterwards add 2 tbspns of soy sauce.
⚫ Then add pre mixed corn flour mixture( 1/2cup flour to 1/2 cup of water)
⚫ Add the corn flour to the broth, stir well and let cook for another 1 minute
Food is ready!
